Traditional Mulled Wine Spices

Wine, Cider & Spice / All things Nice: 
                                                                                            
The following recipes are based on use of our prepared spice sacks which contain all the spice ingredients needed to mull wine or cider.
 
Each box of our spices contains 5 spice sacks - enough for 5 bottles of wine or approx 18 mugful's.
 
Our preference for red wine is Velluto Roso, (which is only available in casks) as it is in-expensive , contains lovely fruit flavourings, mulls really well, and on it's own compliments a wide range of food dishes.
 
The preparation of  these recipes is simple. You can do-it by the mugful in the microwave, use a convetional stove, or our favorite, on the fire.Having a pot of spicy concoction slowly heating, makes the whole house smell festive & welcoming, particularly if your entertaining guests.
 
The added bonus is - it tastes wonderful as well!
 
Mulled Wine                 
                                                 3 Cups  Red Wine          (approx 1 bottle wine)
                                                 1/4 cup Raw Sugar
                                                 1 Spice Sack
                                                 2 slices of Orange
                                                 2 tbsp's Brandy (optional extra)
 
Place wine in pot & place on slow heat, add sugar & stir to dissolve. Add spice sack, brandy, orange slices, & gently stir to rotate & leave.Bring heat to the point just before boil, and remove. (excessive heat will start vaporising alcohol from your brew).With a spoon, remove spice sack & orange slices & dispose, and pour liquid into mugs.
Garnish mugs with citrus of choice. (a segmented slice of lemon or orange).
 
 
 
 
 
Mulled Apple / Nectarine Juice  (Non Alcoholic)
 
                                                      500 - 750ml Apple / Nectarine Juice  (freshup's)
                                                      250 mls lemonade
                                                      1 tbsp raw sugar     (optional)
                                                      1 spice sack
 
Place apple juice & lemonade in a pot on slow heat, add sugar (optional) & stir to dissolve, add spice sack & bring to point of boil.Serve hot in mugs & enjoy.
 
NOTE: Whilst brewing the apple recipe, taste test periodically & add sweetner should you think it warrants it
 
 
 
 
Mulled Cider  (a 'kiwified' recipe from the 16th century)

                                                             500ml Apple Juice                    (freshup's old-fashioned)
                                                100ml Blackcurrent Juice         (Pam's concentrate)
                                                150ml Orange juice 
                                                70ml Brandy 
                                                2 Slices of Lemon 
                                                2 Slices of Orange

                                                1 Spice Sack
                                                2 Pieces candied ginger   (optional)

Mix the apple,blackcurrent, & orange juices together in a saucepan on low heat & add slices of lemon and orange. 
Add spice sack, & stir gently to rotate mix. If using ginger, place pieces on top of citrus slices,which float & dispense the flavouring. This way saves having to send in divers to fish them out before pouring. Bring heat to the point just before boil, and remove. Simmer, uncovered for five minutes. Remove citrus slices, (with ginger on top), spice bag & dispose. Add the brandy & lightly stir, serve into pre-warmed mugs.

 

Christines Special!        
 
                                                                            750ml Apple Juice    (freshup's old-fashioned)
                                                              1/2 cup Rum               (Gold Rum's the best)
                                                              1 Spice Sack
                                                              1 tbsp. Honey

 
Place apple juice in saucepan on low-medium heat, stir in honey & add spice sack. Bring to point of boil & remove.
Allow to simmer, removing spice sack. Add rum & pour into mugs.
 
NOTE: For those who like '2 sugars in their coffee' add an extra tsp of honey in the mug.
 
 
  • The above recipes offer you a guideline only, bearing in mind that everybody has different tastes!\
  • Recipe measures can be reduced or increased proportionately, for use in a single mug, thru to a large soup pot & beyond!
  • For entertaining guests, a crock pot on low heat is the absolute ideal, just remove the lid 15 minutes before guestsstart arriving & the aroma's will enhance the party atmosphere.
  • Don't be afraid to experiment with your creation, & develop your own secret recipe!
